As I am getting older, my eyesight is better on some days than others. Lately I have noticed that it’s best on days when I eat berries for breakfast.
Last summer I froze about 75 quart-sized bags of berries: strawberries from my garden, blueberries from a blueberry farm a few miles away and wild blackberries my Dad was sweet enough to pick and deliver to my house. Mom even washed and bagged some of them before he brought them over!
I thaw a few of all three varieties, mix them together and stir them up with yogurt and cottage cheese. The cottage cheese gives to this breakfast or dessert a texture something like rice or tapioca, and the yogurt makes it creamy. Then I swirl a little honey on it, stir again, and sometimes sprinkle a little granola on top.
So good, and so good for you.
Berry Good Breakfast
- One third cup each of 3 different kinds of berries, fresh or thawed
- One half cup plain or flavored yogurt
- One half cup cottage cheese
- Two tablespoons granola, optional
